Special Soda Bread


Adapted from Paul Hollywoods book

I surfed the net and eventually found a substitute for buttermilk by adding lemon juice to milk
(in my case Goats Milk
)

Ingredients
500g Strong white bread flour
20g Baking Powder
10g Salt
75g Dairy free margerine (I use 'PURE')
290ml Goats milk
10ml Lemon Juice
2 medium eggs, beaten


NOTE - This is a very sticky dough so I have started leaving out some of the milk (about 30ml) and adding it later if necessary. You could also try an electric mixer.

Method
Turn the oven on to gas 6

The "buttermilk"
Measure out 290ml of milk into a jug and add 10ml of lemon juice. Leave this to 'ferment' for half an hour

The Bread Mixture
Mix the flour, salt and baking powder in a bowl.
Melt the 'butter' and beat the eggs, then add these to the mixture.
Now give the milk a good stir and add this to the mixture, keeping some back
(Tip : I dip my fingers in the remaining milk ocasionally, this helps to prevent the dough sticking too much).
Mix everything together, then turn out and knead for about 10 minutes
Put the dough in a loaf tin to get a 'toasty' shape and slice the top a couple of times of you can divide it into 2, form it into rounds and place them on a baking tray. Then cut a deep cross in the top.
Leave it in a warm place for half an hour and the put it in the oven, gas mark 6, for 30 to 40 minutes to bake.
No matter how I try, this bread rises fast and has that 'Exploded' look :) But hey, who cares, No Allergy Bread!
